
The holiday season is upon us and I couldn’t be more excited! I love Christmas and everything that comes along with it (including the stress of shopping and wrapping gifts and hosting dinner). It’s such a mad rush and the days go by so quickly this time of year. It’s so easy to just get up and start working through your “to-do” list with nothing for breakfast but a coffee.
It’s important that we all get our days started with a healthy breakfast but when I don’t have a lot of time, muesli is my go-to. I always make sure I have some delicious and healthy muesli on hand. It’s quick and nutritious and so simple to make. Don’t confuse muesli with granola, though. Muesli is raw while granola is baked and usually contains a syrup to keep it clumped together [click here for my Maple Walnut Granola recipe].
I love having muesli with coconut yogurt or you can even let it soak with your favourite alternative milk and top with berries [check out my recipes for Almond Milk, Hemp Milk and Cashew Milk] .
Ingredients:
- 1 cup oats
- 1/3 cup raisins
- 1/3 cup almond slices
- 1/3 cup pumpkin seeds
- 2 tbsp bee pollen
- 2 tbsp chia seeds
- 1 tsp cinnamon
Instructions:
- Mix all ingredients together and store in a mason jar in the fridge
