Christmas is my favourite time of the year. I love everything about it. I even love the cold and snow! One of my favourite Christmas drinks is eggnog, but sadly eggnog doesn’t love me back 😦 (sorry, TMI?) So I set out looking for a vegan eggnog recipe that came as close to the real thing as possible. I noticed that every recipe I found online contained raw cashews and/or cashew milk. I am assuming this is to either mellow out the flavour and thicken it up a bit. I wanted to keep this nut free, so that more people could enjoy it.
This is a serving for one, but you can easily double or triple the batch! And don’t worry too much about the exact measurements…. just go with your own taste (especially when it comes to the bourbon!!)
- 1 mug full of Coconut Milk*
- 1 tbsp Maple syrup
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/2 tsp Vanilla extract
- 1 oz Bourbon
Add all ingredients into a shaker cup, and shake until it’s all mixed. Pour into your favourite Christmas cocktail glass. Serve over ice.
*use coconut milk from a carton and not from a can. The canned stuff is amazing, but tastes exactly like coconut, which is not what eggnog tastes like. You can also sub this for any other alternative milk.
