Maple Walnut Granola

This is one of the first recipes I created when I decided to ditch processed foods and refined sugars.  It’s still one of my favourites.  I make this granola often and always make sure I have some on hand.  I hope you enjoy it as much as I do.  I’m quite proud of this one 🙂

Ingredients:

  • 2 cups rolled oats
  • 1 cup walnuts chopped
  • 1/2 cup cacao nibs
  • 1/2 cup pumpkin seeds
  • 1/4 cup hemp hearts
  • 1/2 tsp cinnamon
  • 1/2 cup coconut oil melted
  • 1/2 cup 100% pure maple syrup
Instructions:
  1. Preheat oven to 350°
  2. Combine all the ingredients in a large bowl and mix to combine
  3. Spread on a baking sheet lined with parchment paper
  4. Bake for 15 minutes and stir
  5. Bake for another 15 minutes and stir
  6. Bake for a final 5 minutes

This makes about 5 cups.  Be sure to store in an air-tight container.  You can also add in 1/2 cup of raisins after baking.
