
I love meals that I can make ahead of time and place in the fridge overnight. It just makes things so much easier in the morning, and I’m about taking it easy in the AM.
Chia pudding is one of my favourite make ahead meals – it takes minutes to prepare and is also incredibly versatile: sometimes it’s breakfast, sometimes it’s dessert and sometimes it’s a mid-day snack.
So, what is chia?
Chia seeds are tiny little seeds that become gelatinous when soaked in liquid. There’s a ton of ways you can add them into your diet, but my favourite is chia pudding!
Chia seeds are gluten free and can help with digestion. They are also loaded with fibre, protein, omega-3’s, antioxidants and a handful of other nutrients.
You can dress up chia pudding anyway you like, but my current obsession is banana chocolate chia pudding. You can find the recipe below.

Banana Chocolate Chia Pudding
Serves: 1
Ingredients:
- 1/4 cup chia seeds
- 3/4 cup non-dairy milk
- Half a banana, mashed
- 1 tsp raw cacao powder
Instructions:
- Mash half a banana in a bowl
- Add in the rest of the ingredients: chia seeds, non-dairy milk, cacao powder
- Whisk together until combined
- Cover and place in the fridge overnight and enjoy the next morning
